北方气候

我们很高兴地承认,我们处于威士忌世界的绝对边缘。远离高速公路,远离世界上的威士忌商店,但我们就在那里,因为我们知道这里的大自然为我们提供了什么。使我们的威士忌与众不同的并不是北方自然本身——即使森林、广阔的土地和高度清洁的空气确实起到了作用。我们认为世界上没有哪个酿酒厂的仓库温度变化如此之大,就像高海岸酿酒厂一样。

在冬季,昂格曼河在高海岸酿酒厂前结冰。

在诺尔兰,夏季和冬季之间以及白天和黑夜之间的温度变化是巨大的。寒冷的冬天可以将温度降至零以下 30 度,而炎热的夏季则可以将温度升高近 70 度。在未经加热的大型仓库中成熟的威士忌暴露在巨大的自然力量中。在炎热的日子里,桶内的压力会增加,威士忌会膨胀并深入橡木桶。在桶的深处,橡木的味道被释放出来,当温度和压力再次下降时,这些味道就会出来。温度变化是持续的,白天和黑夜。它们加速了部分成熟过程,并有助于独特的风味发展。

Ångerman 河流冷水

来自日本的灵感混搭

我们在世界不同地区找到了我们的榜样。我们从艾莱威士忌中汲取灵感,我们的蒸馏器在形状和大小上都与 Kilchomans 非常相似。我们也非常喜欢日本威士忌。像许多日本酿酒厂一样,我们使用清澈的麦芽汁,带来更多的果味。因此,我们在糖化过程中非常彻底。我们将未通过麦芽床过滤的第一部分麦汁再循环,我们将其添加到顶部并让壳残留物和其他东西有时间分离。它提供清晰的优质麦芽汁。在第三次和醪液中,我们使用温度比平时略低的水,以避免苦味,否则会从谷物的壳部分中抽出。在日本以外,明显的疣是相当不寻常的,而在大型、工业化程度更高的酿酒厂,您几乎没有时间等待。

酵母和时间

因为我们想要开发一款果味浓郁的威士忌,所以我们使用法国酿酒酵母,使麦芽汁充满果味的酯类、醛类和酮类。我们的发酵时间异常长,平均为 82.5 小时,这是构建我们口味特征的一块拼图。当酵母发酵完毕后,我们让麦汁多静置一天。然后一个过程开始,乳酸菌产生不同的味道,如柑橘和酸橙。这确实需要更长的时间,但较长的发酵时间为您提供我们威士忌中发现的美味健康和圆润的风味。

 我们平均冲泡 82.5 小时,这是我们创造风味特征的难题的一部分。

细致的蒸馏

蒸馏是工艺的一部分,斯蒂尔曼真正控制蒸馏物的特性。在高海岸,我们的目标是果味生烈酒,由于风味在此过程中较早出现,因此我们在 13 分钟后提前进行了第一次切割,以获取未受污染的蒸馏酒。67% 的第二次削减可能比任何其他酿酒厂发生得更早,以防止较重的物质进入威士忌。然而,烟熏馏出物,我们增加了获取提供烟熏味的酚类的时间。在这里,我们分别在 30 分钟和 60% 后削减。结果是更少的果味和更美丽的烟草、甘草和烟味。
